100% raw, unprocessed honey.
ORIGIN
Norway (Innlandet and Jotunheimen).
HARVESTING PROCESS
Upon harvest in remote locations away from agricultural land, the honey boxes are placed in a pre-heated room (27C) for dehumidification to remove the high water content and prevent the honey from yeasting. Once honey reaches 18-19% water content, actual extraction begins. The honey flows slowly into a large tanks that has filter walls in 3 different chambers before being switched in another larger tank, where the honey rests for 2-3 days in order for the wax and particles to move to the surface of the tank for removal. At that stage, the honey is almost clean and is tapped from the bottom of the tank and run slowly through another filter that removes the last large wax particles. The honey is then transferred to stirring tanks in order to crush the crystal over the course of 3 to 6 weeks. The honey is then finally jarred.
